Ernest Schuetz 'Epica' Cabernet Merlot Shiraz Mudgee
The making of Epica is an intensive labour of love, at harvest a rigorous selection is made in the vineyard by only selecting the largest and healthiest bunches of grapes.
Each bunch is then carefully laid down to air dry on racks for an average period of 5 weeks, after which a percentage is lost to the heavens.
The Epica is made with 50% Cabernet, 40% Shiraz and 10% Merlot from our dry grown single estate Mudgee fruit, aged in new French oak for a period of 22 months.
Deep dark in colour with big powerful concentration of ripe briary fruit, typical Amarone bitter sweet dark chocolate, prune and cedar oak are both evident on the nose and palate.
This is a very dense and textured wine with lingering flavours of sweet liquorice and eucalypt.
This wine will benefit from extended cellaring for up to 10+ years
