Passo Doble is made by the ancient Ripasso method meaning 'repassed' where the left over air dried grape skin from our Amarone wine Epica are passed over to our Cabernet Sauvignon Passo Doble, the wine then goes through a second fermentation which gives more body and structure to the wine.

Passo Doble (meaning second step) is a rich wine style with great personality and always made with an extremely limited production, from our single estate dry grown Mudgee fruit.

When fermentation was complete, the Epica Amarone skins were added and plunged for 3 day, after a brief second fermentation took place the wine was then aged in new Caucasian and French oak for a period of 18 months.

Deep dark purple with powerful concentration of blackcurrant, camphor and choc-mint, are both evident on the nose and palate.

This is a very rich and textured wine with lingering flavours of savoury oak, exotic spice and morello cherry.

Will benefit from extended cellaring for up to 10+ years
