An excellent growing season for Cabernet Sauvignon, being mild and without extremes of temperature. However, crops were low with small bunches and berries. Harvest took place in mid to late March. The small crops meant that fruit ripened quickly and all our Cabernet blocks were harvested within ten days.

Winemaking

For our premium Cabernets, we look for ripe fruit flavours of blackberry, damson plum and blackcurrant. Importantly, we wish to avoid any green, herbal notes. Fermentation took place in several batches, using small open fermenters for between 10-14 days. Pressings were included with free-run juice after evaluation. The wine was then matured in French and American oak barrels for fourteen months prior to blending and bottling

Tasting comments:

Opaque dark red-purple. Blackberry, cassis and plum aromas with a hint of varietal spearmint on the nose. Oak is in the background. The palate is concentrated and full. This variety can be tannic in its youth but here, the rich fruit has enveloped the structure of the wine to provide a generous, smooth mouthfeel with a long, powerfully constructed finish. Drinking well on release and has the capacity to cellar for the medium term.
