- Fruit was sourced from a superb vineyard nestled in the cooler foothills of Clarendon, in the northeast corner of the McLaren Vale region. It's a mature vineyard that has wonderful bright red fruit with high levels of perfume. The fruit was handpicked in the cool of the morning with 30% kept as whole bunches in the ferment. Using wild yeast as the fermenting agent, the wine went through a gentle ferment over 12 days before being transferred to a combination of second- and third-use French oak barrels (a combination of 500L puncheons and 300L hogsheads). The wine was kept in oak for 14 months prior to bottling.
